The purpose of this paper is to:
i. describe the background and results of an ACIAR-PARDI Scoping study on current post-harvest processing and trade of sea cucumbers in Fiji, Tonga and Kiribati, conducted during 2011;
ii. summarise a follow-on ACIAR project to help improve the quality of postharvest processing by fishers in Fiji, Tonga and Kiribati, to be conducted from 2013–2016. Background
